Axil Coffee Sebastian Gomez Single

This 100% Castillo microlot from Colombia's La Divisa farm was grown by Sebastian Gomez. Carefully hand-sorted, cherries were exposed to 30 hours of underwater fermentation before being pulped. The parchment was washed, and then dried in temperature-controlled conditions until the desired moisture content was achieved. The roast profile of this coffee is espresso-perfect, with tasting notes of orange, peach, green grape, and panella. A 20g in/44g out recipe, with an extraction time of 27-30 seconds, delivers a superb, flavour-rich cup.
