Gutsy Apple Radish Kimchi is created by allowing organic vegetables and spices to ferment in an oak barrel for 4-6 weeks. This extended fermentation process is necessary in order to maximize the number of probiotics and post-biotics produced. Post-biotics, which consist of amino acids, vitamins and anti-microbial peptides, are the result of fermentation. We use oak barrels for their unique flavor, sustainability, and to reduce the amount of chemicals that enter the fermentation process. Additionally, plastic containers should be avoided as they may introduce harmful phthalates and BPA into the product.
