The Stock Merchant sardines in brine solution are my favourite. The ingredients are simple - sardines, water and sea salt, no sdditives! The light salinity echoes out the real taste of sardines free of greasiness. Every bite gives meaty, tasty, ocean-fresh feel and the texture of sardines is just right not too soft not too firm. Excellent!

McKenzie’s Tapioca Flour 300g
The pantry hero that thickens, binds and bakes without fuss.
McKenzie’s Tapioca Flour is a delicious, versatile alternative to wheat flour. It has a mild, slightly sweet flavour and a silky, starchy texture, which makes it one of the best thickeners in the kitchen. It turns runny gravy, watery pie filling or a stir-fry sauce glossy and smooth, without the lumps or the floury taste.
Why cooks love it
- A brilliant thickener. It sets sauces, soups, gravies and fruit pie fillings to a clear, glossy finish.
- Mild and slightly sweet. It won’t overpower savoury dishes or desserts.
- Gives that chewy texture. It’s the secret behind Brazilian cheese bread (pão de queijo), bubble tea pearls and springy flatbreads.
- A wheat flour alternative. Blend it into flour mixes for crisper crusts, lighter bakes and better binding.
- Trusted Australian pantry brand. McKenzie’s has been a staple in Australian kitchens for generations.
How to use it
- To thicken: mix 1 tablespoon with a little cold water, then stir it into about 250ml of hot liquid. Simmer briefly until glossy.
- For baking: replace up to a quarter of the flour in a recipe with tapioca flour for extra chew and crispness.
- For crumbing: dust meat, tofu or vegetables before pan-frying for a light, crackly crust.
