Ingredients
- 2 cloves garlic, minced
- 230g button mushrooms, sliced
- 230g spaghetti
- 25g butter
- 2 tablespoons extra virgin olive oil
- Salt, to taste
- Freshly cracked black pepper, to taste
- 40g freshly grated Parmesan cheese (or ⅓ cup pre-grated Parmesan)
- 3 tablespoons truffle oil
1 or 2 tablespoons truffle sauces (optional)
Directions
- Bring 2.5 litres of salted water to a rolling boil.
- Peel and finely mince the garlic. Using the back of your knife, gently crush the garlic before chopping to help release its flavour.
- Heat a large saucepan over medium heat. Add the sliced mushrooms to the dry pan with a small pinch of salt. Cook without oil or butter at first, allowing the mushrooms to release their moisture and begin browning naturally.
- Once the mushrooms are golden, add the butter and continue cooking until the butter turns lightly nutty and fragrant. Remove the mushrooms from the pan and set aside.
- In the same pan, add the olive oil, garlic, salt, and black pepper. Sauté gently over medium heat, stirring occasionally. Avoid overcooking the garlic, as it can become bitter.
- Cook the spaghetti until al dente according to the packet instructions. Before draining, reserve 1 cup of the starchy pasta water.
- Add a splash of the reserved pasta water to the garlic mixture and simmer briefly until slightly reduced.
- Return the mushrooms to the pan, then add the cooked spaghetti and Parmesan cheese. Toss everything together gently.
- Gradually add the reserved pasta water while stirring continuously until the Parmesan melts into a silky sauce that evenly coats the pasta. You may not need all the pasta water.
- Taste and adjust seasoning with extra salt and black pepper if needed.
- Serve immediately and finish with a generous drizzle of truffle oil just before serving.
- Enjoy every creamy, earthy, truffle-infused bite.
