Delight in the Creamy Stroganoff Sauce with Tender Beef and Savoury Mushrooms

  • 600 g / 1.2 lb scotch fillet steak / boneless rib eye
  • 2 tbsp vegetable oil, divided.
  • 1 large onion (or 2 small onions), sliced.
  • 300 g / 10 oz mushrooms, sliced.
  • 40 g / 3 tbsp butter
  • 2 tbsp flour
  • 2 cups / 500 ml beef broth, preferably salt reduced
  • 1 tbsp Dijon mustard
  • 60ml good quality Brandy
  • 150 ml / 2/3 cup sour cream
  • Pinch of Malden Salt flakes


  • 250 - 300 g / 8 - 10 oz creamy mashed potatoes
  • Chopped chives for garnish (optional)


  • Flatten the steaks to about 3/4cm / 1/3" thick and slice into 5mm / 1/5" strips. Season with salt and pepper.
  • Heat 1 tbsp oil in a large skillet over high heat. Sear half the beef until browned, then transfer to a plate. Repeat with the remaining beef.
  • Reduce heat to medium-high and remove beef from the pan.
  • Add good quality Brandy to the pan and allow it to burn off.
  • Add butter to the skillet and sauté onions for 1 minute, then add mushrooms and cook until golden.
  • Stir in Dijon mustard and cook for a few seconds to enhance the flavours of onions and mushrooms.
  • Sprinkle flour over the mushrooms and cook for 1 minute, stirring constantly.
  • Gradually add the beef broth while stirring, then stir in sour cream until well combined.
  • Simmer until the sauce thickens to a creamy consistency, adjusting salt and pepper to taste.
  • Return the beef to the skillet and simmer for 1 minute. Remove from heat.
  • Serve the creamy Stroganoff sauce over creamy mashed potatoes, and garnish with chopped chives if desired.
