Ingredients
- 200g pasta
- 1 tablespoon olive oil
- 1 small garlic clove, finely chopped
- 150ml plant-based cooking cream
- 1–2 tablespoons vegan truffle paste
- 60–100ml reserved pasta water
Salt
black pepper
- Optional: sautéed mushrooms, parsley or vegan parmesan
Directions
- Cook the pasta in salted water according to its packet directions.
- Reserve one cup of pasta water before draining.
- Warm the olive oil in a frying pan over low-to-medium heat.
- Add the garlic and cook briefly without browning it.
- Add the plant-based cream and warm gently.
- Stir in one tablespoon of Gourmet Italia truffle paste.
- Add the drained pasta and enough reserved water to create a glossy sauce.
- Taste before adding more truffle paste, salt or pepper.
- Finish with mushrooms, parsley or vegan parmesan if desired.
