Easy Vegan Truffle Pasta in 15 Minutes

Some dinners require three pans, seventeen ingredients and a small emotional support team. This is not one of them.

This easy vegan truffle pasta uses Gourmet Italia Vegan Black Truffle Paste to create a creamy, earthy sauce in approximately 15 minutes.

Ingredients

  • 200g pasta
  • 1 tablespoon olive oil
  • 1 small garlic clove, finely chopped
  • 150ml plant-based cooking cream
  • 1–2 tablespoons vegan truffle paste
  • 60–100ml reserved pasta water
  • Salt and black pepper
  • Optional: sautéed mushrooms, parsley or vegan parmesan

Method

  1. Cook the pasta in salted water according to its packet directions.
  2. Reserve one cup of pasta water before draining.
  3. Warm the olive oil in a frying pan over low-to-medium heat.
  4. Add the garlic and cook briefly without browning it.
  5. Add the plant-based cream and warm gently.
  6. Stir in one tablespoon of Gourmet Italia truffle paste.
  7. Add the drained pasta and enough reserved water to create a glossy sauce.
  8. Taste before adding more truffle paste, salt or pepper.
  9. Finish with mushrooms, parsley or vegan parmesan if desired.

Why pasta water matters

The starch in pasta water helps the sauce cling to every strand instead of collecting sadly at the bottom of the bowl.

Add it gradually. You want a silky sauce, not a truffle-scented swimming lesson.

Do not cook away the aroma

Truffle aromas are delicate, so avoid boiling the paste aggressively. Stir it into the warm sauce near the end of cooking.

Easy variations

Add sautéed mushrooms for extra depth, baby spinach for colour or roasted cauliflower for texture.

For a non-vegan version, use regular cream and finish with parmesan. The paste itself may be vegan, but the final dish depends on the additional ingredients you choose.
