Ingredients

  • 1kg chicken wings
  • 4–6 sprigs fresh thyme, plus extra for garnish
  • 5 tbsp soy sauce
  • 1 tbsp sesame oil
  • 2 tbsp plain Greek yoghurt
  • 2–3 tbsp Black Chilli Sriracha
  • 1 tbsp brown sugar
  • 1 tsp freshly grated ginger
  • 1–2 garlic cloves, minced
  • 1 shallot, finely minced
  • Zest of 1 lemon
  • 50ml olive oil

Directions

  1. In a small bowl, whisk together the soy sauce, sesame oil, yoghurt, Black Chilli Sriracha and sugar until the sugar dissolves. Add the ginger, garlic, shallot, lemon zest and olive oil. Mix well until the marinade is smooth and fully combined.
  2. Place the chicken and thyme sprigs into a resealable bag. Pour in the marinade, press out any excess air, seal tightly and refrigerate for at least 1 hour.
  3. Preheat the grill. Remove the chicken from the bag, discarding the leftover marinade. Lay the chicken skin-side down on the hot grill and cook for about 4 minutes, or until distinct grill marks appear.
  4. Flip the chicken using tongs and cook for another 4 minutes, or until the internal temperature reaches 70°C.
  5. Transfer the chicken to a board, wrap loosely in foil and let it rest for 15 minutes. Finish cooking to a final temperature of 75°C for perfect succulence.
