Authentic Birria Tacos Recipe
Ingredients
From the Birria Chilli Pack
3 dried ancho chillies
6 dried guajillo chillies
3–5 dried arbol chillies
1 tablespoon Mexican oregano
Other Ingredients
2–3 kg beef chuck, lamb, or goat
2 roasted tomatoes
4 garlic cloves
½ onion
1 teaspoon cumin
1 teaspoon black pepper
1 small cinnamon stick
2 tablespoons white vinegar
1 teaspoon salt
4–6 cups beef stock or water
For Serving
Fresh tortillas
Chopped onion
Fresh cilantro
Lime wedges
Optional cheese for quesabirria tacos
Step 1: Prepare the Chillies
Remove the stems and seeds from the dried chillies.
Toast them lightly in a dry pan for about 30 seconds until fragrant. Be careful not to burn them, as burnt chillies can turn bitter.
Soak the toasted chillies in hot water for 15–20 minutes until soft.
Step 2: Make the Birria Sauce
Add the softened chillies to a blender along with:
roasted tomatoes
garlic
onion
cumin
black pepper
cinnamon
Mexican oregano
vinegar
Blend until smooth, adding some of the soaking liquid if needed.
This rich chilli paste forms the base of the birria marinade.
Step 3: Marinate the Meat
Place the meat in a large pot or roasting dish and pour the chilli sauce over it, making sure it’s fully coated.
For the best flavour, cover and marinate for several hours or overnight.
Step 4: Slow Cook
Add beef stock or water and cook covered at 160–170°C (320–340°F) for about 3–4 hours, until the meat becomes tender and easy to shred.
The cooking liquid becomes the famous birria consomé.
Step 5: Make Birria Tacos
Shred the cooked meat.
Dip tortillas into the red broth, fill with meat, and cook in a hot pan until crispy.
Serve with chopped onion, cilantro, and a squeeze of lime.
And don’t forget to dip the tacos back into the broth.
