Sardine Toasts with Rocket, Basil & Walnut Pesto

Ingredients

    • 50g baby rocket leaves
    • 50g fresh basil leaves
    • 20g fresh parsley
    • 50g walnuts
    • 2 garlic cloves
    • 120–150ml quality olive oil
    • Pinch of salt

    • 1 × 106g tin Brunswick Sardines in Spring Water (No Added Salt)
    • Squeeze of fresh lemon juice
    • Freshly ground black pepper
    • Ricotta
    • French stick or Sourdough Bread sliced diagonally

    • Fresh basil leaves, to garnish

    Directions

    1. Make the Rocket Pesto

    2. Place the rocket, basil, parsley, walnuts and garlic in a blender or small food processor. Pulse until the herbs and walnuts are finely chopped and the nuts begin to release their natural oils.

    3. Add half the olive oil and blend for approximately 20 seconds. Pour in half the remaining oil and blend again.

    4. Gradually add the rest of the olive oil until the pesto reaches a relatively smooth, spoonable consistency. You may need slightly more or less oil depending on your preferred texture.

    5. Taste the pesto and season with a small pinch of salt.

    6. Prepare the Sardines

    7. Drain the Brunswick Sardines and place them in a small bowl. Add a squeeze of fresh lemon juice and a little cracked black pepper.

    8. Gently mash the sardines with a fork. Keep the mixture slightly chunky rather than turning it into a completely smooth paste.

    9. Toast the Bread

    10. Cut the French stick diagonally into slices and toast until golden and crisp around the edges.

    11. The bread should be sturdy enough to carry the toppings without surrendering halfway between the plate and your mouth.

    12. Assemble the Sardine Toasts

    13. Spread approximately one tablespoon of ricotta over each warm slice of toast.

    14. Top with the mashed sardines, followed by a generous dollop of rocket pesto. Finish with a fresh basil leaf and serve immediately.
