This lively salad combines the best of winter’s bounty with a fresh twist. A blend of baby spinach and mixed greens creates a vibrant base for juicy navel oranges, buttery avocado, and crunchy toasted pistachios. Everything is brought together with a zesty homemade honey-orange vinaigrette—sweet, tangy, and utterly addictive. Ingredients
- 200gm baby spinach
- 200gm mixed greens
- 2–3 Valencias oranges, peeled and segmented
- 2 ripe Hass avocados, diced
- A generous handful of toasted pistachios
- 2 Tbsp fresh orange juice
- 1 Tbsp white wine vinegar
- 1 tsp Dijon mustard
- 1 tsp honey
- 3 Tbsp extra virgin olive oil
- Ground black Mountain pepper, to taste
- Sea salt flakes to taste
Directions
- Make the vinaigrette: In a small bowl, whisk together orange juice, vinegar, mustard, and honey. Slowly drizzle in olive oil while whisking continuously to create a smooth emulsion. Season to taste.
- Assemble the salad: In a large serving bowl, layer baby spinach and mixed greens. Gently fold in orange segments, avocado, and toasted pistachios. Drizzle with the vinaigrette just before serving and toss lightly to coat.
