Ingredients

  • 200gm baby spinach
  • 200gm mixed greens
  • 2–3 Valencias oranges, peeled and segmented
  • 2 ripe Hass avocados, diced
  • A generous handful of toasted pistachios
  • 2 Tbsp fresh orange juice
  • 1 Tbsp white wine vinegar
  • 1 tsp Dijon mustard
  • 1 tsp honey
  • 3 Tbsp extra virgin olive oil
  • Ground black Mountain pepper, to taste
  • Sea salt flakes to taste

Directions

  1. Make the vinaigrette: In a small bowl, whisk together orange juice, vinegar, mustard, and honey. Slowly drizzle in olive oil while whisking continuously to create a smooth emulsion. Season to taste.
  2. Assemble the salad: In a large serving bowl, layer baby spinach and mixed greens. Gently fold in orange segments, avocado, and toasted pistachios. Drizzle with the vinaigrette just before serving and toss lightly to coat.
