Ingredients
- Caputo Flour 00 – as needed
- 4 x Eggs
- Milk 100 ml
- Corn kernels, drained – 600 g
- Chives, chopped – 40 g
- Spanish chorizo, finely diced – 2
- Feta, crumbled – 100 g
- Avocados – 4
- KNORR Thai Lime Powder – 20 g
- KNORR Hollandaise Sauce (Gluten Free) – 1 L
- KNORR American Tomato Chilli Relish (Gluten Free) – 500 ml
- Sprinkle of Dukkah

- Choose Your Serves
- Select the number of servings you need, and the ingredient quantities will adjust to suit.
- Sift the flour into a large bowl and create a well in the centre.
- In a separate bowl, whisk together the eggs, milk, salt, and pepper.
- Gradually pour the wet mixture into the flour, folding until just combined.
- Stir through the corn, chopped chives, diced Spanish chorizo, and crumbled feta. Set aside.
- Heat a lightly oiled frying pan over medium heat.
- Spoon portions of the batter into the pan and cook until golden brown on both sides.
- Scoop out the avocado flesh into a bowl.
- Sprinkle with KNORR Thai Lime Powder for a citrus kick.
- Mash with a fork to your desired consistency.
- Gently heat the KNORR Hollandaise Sauce in a saucepan, stirring occasionally until smooth and warmed through.
- Layer the fritters over the smashed avocado.
- Drizzle with warm hollandaise.
- Add a side of KNORR American Tomato Chilli Relish and a sprinkle of dukkah for extra flavour and crunch.
