- 2 Eggplants
- 3 tablespoons of ghee
- 1 packet of Baingan Masala spice mix
- 1 chopped onion
- 1 can (400g) of diced tomatoes
- 1/2 cup of Greek-style yoghurt
- 1/2 tablespoon of ginger-garlic paste
- 1 teaspoon Chilli Oil (or more if you prefer a hotter dish)
- Sea Salt Flakes
Directions
- Begin by cutting the eggplants into quarters. Sprinkle them with salt and let them rest for 5 minutes in a bowl.
- While the eggplants are resting, prepare a mixture by combining 2 tablespoons of Baingan Masala spice mix with 1/2 cup of Greek-style yoghurt. Set this mixture aside.
- In a pan, add one tablespoon of ghee and pan-fry the eggplant quarters until their skin turns brown. Once done, remove the eggplant from the pan and set aside.
- On medium heat, add two tablespoons of ghee to the pan. Reduce the heat to low and incorporate the remaining Baingan Masala spice mix into the pan. Cook the spice mix for about 30 seconds.
- Now, add the finely chopped onion and sauté until it turns brown. This should take about 3 to 5 minutes over medium heat.
- Add the chopped tomatoes to the pan and continue cooking on medium heat for 5 to 7 minutes until they soften.
- Now add the Baingan Masala spice mix combined with 1/2 cup of Greek-style yoghurt to the pan of onions and tomatoes. Add a teaspoon of chilli oil.
- Stir in the 1/2 tablespoon of ginger-garlic paste and 1/2 cup of water.
- Return the pan-fried eggplant quarters to the pan and let the mixture simmer for approximately 10 minutes, allowing the flavours to meld together.
- Now, you have a delectable Baingan Masala ready to be enjoyed. Serve it with rice or naan bread or roti and savour the wonderful flavours of this dish.
