Stewing beef becomes wonderfully tender when cooked slowly. The extended cooking time allows the connective tissue to break down while the meat absorbs the curry sauce and spices.
Meanwhile, the potatoes, carrot, onion and capsicum soften into the sauce, creating a complete meal with very little preparation. Browning the beef before it enters the slow cooker adds extra colour and flavour, so it is worth spending those few additional minutes at the stove.

Ingredients
700 g stewing beef, cut into bite-sized pieces
1 large potato, chopped
1 green capsicum, chopped
1 green chilli, thinly sliced
1 medium carrot, roughly chopped
1 large onion, sliced
1 tablespoon minced garlic
1 tablespoon minced ginger
1 beef stock cube, crumbled
400 g canned chopped tomatoes
400 ml full-fat coconut milk
1 tablespoon curry powder
1 teaspoon ground cumin
1 teaspoon ground turmeric
1 teaspoon ground coriander
1 teaspoon ground cinnamon
1 tablespoon tomato paste
1 tablespoon marmalade or 2 tablespoons mango chutney
1 teaspoon cornflour
1 teaspoon olive oil
Pepper, to taste
Salt to taste
Directions
Brown the beef
Place the beef in a bowl and sprinkle it with the cornflour. Season with salt and pepper, then toss until evenly coated.
Heat the olive oil in a frying pan over medium-high heat. Add the beef and sear for 2–3 minutes, turning until browned on all sides. Brown the meat in batches if necessary, as overcrowding the pan can cause it to steam.
Fill the slow cooker
Transfer the browned beef to your slow cooker. Add the potato, capsicum, chilli, carrot, onion, garlic, ginger, crumbled stock cube, tomatoes and coconut milk.
Stir in the curry powder, cumin, turmeric, coriander, cinnamon and tomato paste. Add either the marmalade or mango chutney for a gentle touch of sweetness.
Cook until tender
Cover and cook on low for eight hours or high for approximately four hours. The curry is ready when the beef is tender, the vegetables are cooked and the sauce has become rich and aromatic.
Taste and adjust
Stir the curry thoroughly before serving. Taste and adjust the salt, pepper or chilli if required.
