Ingredients

  • 1 X Cup cooked quinoa
  • 1 x Can 400gm chickpeas, drained and rinsed
  • 1 x tbsp olive oil
  • ½ tsp cumin
  • ½ tsp chili powder
  • ½ tsp turmeric
  • ½ avocado, sliced
  • ½ cup cherry tomatoes, halved
  • 1 x tbsp tahini
  • Juice of ½ lemon
  • Salt to taste
  • Pepper to taste

Directions

  1. Heat olive oil in a pan over medium heat. Add chickpeas and season with cumin, chili powder, turmeric, salt, and pepper.
  2. Sauté for 5-7 minutes until crispy and golden brown.
  3. In a bowl, layer cooked quinoa, spicy chickpeas, avocado slices, and cherry tomatoes.
  4. Drizzle with tahini and a squeeze of fresh lemon juice.
