Ingredients
- 1 X Cup cooked quinoa
- 1 x Can 400gm chickpeas, drained and rinsed
- 1 x tbsp olive oil
- ½ tsp cumin
- ½ tsp chili powder
- ½ tsp turmeric
- ½ avocado, sliced
- ½ cup cherry tomatoes, halved
- 1 x tbsp tahini
- Juice of ½ lemon
- Salt to taste
- Pepper to taste
Directions
- Heat olive oil in a pan over medium heat. Add chickpeas and season with cumin, chili powder, turmeric, salt, and pepper.
- Sauté for 5-7 minutes until crispy and golden brown.
- In a bowl, layer cooked quinoa, spicy chickpeas, avocado slices, and cherry tomatoes.
- Drizzle with tahini and a squeeze of fresh lemon juice.
