- ⅓ cup cocoa powder
- 1 tsp instant coffee (or espresso powder)
- 1¼ cups boiling water
- 2 oz unsweetened chocolate, finely chopped
- 6 oz 60% cacao dark chocolate chips
- ½ cup (1 stick) butter, melted
- ½ cup oil
- 2 large eggs
- 2 large egg yolks
- 2 tsp vanilla extract
- 2 tbsp Red Sriracha
- 2½ cups sugar
- 1¾ cups flour
- 1 tsp salt
Directions
- Preheat oven to 350°F (175°C).
- In a large bowl, whisk together cocoa powder, instant coffee, and boiling water until smooth
- Stir in chopped unsweetened chocolate and dark chocolate chips until mostly melted.
- Whisk in melted butter and vegetable oil. (Don’t panic if it looks curdled—it’ll come together.)
- Add eggs, egg yolks, and vanilla extract, whisking until smooth.
- Stir in sugar until fully incorporated.
- Add the Sriracha! (This is where the magic happens.)
- Fold in flour and salt, mixing until just combined.
- Pour the batter into a greased 9×13-inch baking pan, smoothing the top.
- Bake for 30 to 35 minutes, or until a toothpick inserted halfway between the edge and center comes out with just a few moist crumbs
- Cool in the pan on a wire rack for at least 1½ hours before cutting.
