Ingredients
- 4 Lebanese cucumbers (about 500 g)
- 1 tsp sea salt flakes
- 2 spring onions, thinly sliced
- Dressing
- 2 tbsp light soy sauce or tamari
- 1½ tbsp Chinkiang black vinegar (or rice vinegar)
- 1 tsp caster sugar
- 2 tsp toasted sesame oil
- 1–2 tsp chilli oil, to taste
- 2 garlic cloves, finely grated
- Garnish
- 1 tbsp toasted sesame seeds
- Small handful coriander leaves
Directions
Lay the cucumbers on a board. Press down firmly with the flat of a large knife or bash lightly with a rolling pin until they split along their length.
Tear or cut them into rough 3 cm pieces, discarding any very watery seed sections.
Toss with the salt in a colander and leave to drain for 15 minutes. This draws out water so the dressing doesn't dilute.
Meanwhile, whisk the soy, vinegar and sugar until the sugar dissolves. Stir in the sesame oil, chilli oil and garlic.
Shake off the excess liquid from the cucumbers and pat them dry with paper towel.
Toss the cucumbers and spring onion with the dressing and rest for 5 minutes.
Tip onto a serving plate and scatter with sesame seeds and coriander just before serving.
