Ingredients
- 3 x Tablespoons Soy Sauce
- 6 x Tablespoons honey
- 1 x Tablespoon oil
- 3 x Tablespoons fresh lime juice
- 4x Garlic/ Ginger roughly chopped
- 1½ tablespoons Black Chilli Sriracha sauce ( More If you dare)
- 1¼ teaspoons salt
- 8–10 skinless chicken thighs, trimmed and cut into 2-inch chunks
- 2 tablespoons chopped fresh coriander, plus whole sprigs for garnish
Directions
- Add soy sauce, honey, Olive oil, lime juice, garlic ginger paste, Black Chilli Sriracha, and salt to a blender. Blitz until silky smooth. Pour a small amount into a separate bowl, cover, and refrigerate — this will become your vibrant drizzling sauce.
- Place your chicken thigh chunks in a large zip-lock or resealable bag. Pour in the remaining marinade, seal tightly, and give it a gentle massage to coat. Rest the bag in a bowl and refrigerate for at least 6 hours, or let it soak overnight for maximum flavour.
- Remove the marinated chicken from the fridge and thread the pieces onto skewers. If the chicken pieces are long or thin, fold them in half as you go for even grilling.
- Preheat your barbecue or grill to medium-high heat. Grill the chicken skewers, turning occasionally, until beautifully golden and cooked through. This should take about 10 to 15 minutes, depending on your grill
- Place the skewers on a serving platter. Gently warm the reserved marinade and drizzle it over the top. Sprinkle with freshly chopped coriander and garnish with a few extra sprigs. Serve immediately and enjoy the spicy-sweet magic!
