Olasagasti prepares these whole anchovies according to a traditional San Sebastián recipe. Lightly fried in olive oil, they’re paired with garlic, a lively touch of cayenne pepper and wine vinegar for a savoury, aromatic flavour with just the right amount of kick.

Unlike tightly packed anchovy fillets, these anchovies are kept loose in the tin. This gives them room to marinate properly in the garlicky, gently spicy olive oil—and frankly, we all perform better with a little personal space.

Olasagasti has been preserving premium seafood from Spain’s Cantabrian coast since the 1920s. Still guided by generations of fishing knowledge and artisan techniques, the family is renowned for producing some of Spain’s finest tuna and anchovies.
