Excellent product, but the postage is worth more than the flower itself! GRUH!!
Up until now I have been using wallabyās bread flour at 11.5% protein and all my sourdoughās have been turning out a sticky gooey mess. I made up a kilo batch of flour 500 g of Caputo and 480 g of the Willoughby flour and 12 g of gluten flour and for the first time I had good oven spring the crumb was the best Iāve had yet because of the gluten strength. I could leave it ferment a little bit longer to get a lighter crumb.
