Chef Ivy was running a Melbourne café where Chilli Scrambled Eggs was a hit on the menu. Being dissatisfied with the chilli flavour and not wanting to resort to putting slices of chilli on her eggs, Ivy set about developing what became her original Homemade Chilli Garlic Oil. Getting the flavours right did not happen straight away. It took a year of experimenting and discovering something new every day about how these complementary flavours interacted so that they would not overpower the flavour of the other ingredients in this popular and simple dish and then one day, Voila! This was IT.
