Considered a secret ingredient in authentic Chinese cooking, this aromatic Chinese rice cooking wine adds savoury depth, complexity and balance to stir-fries, marinades, braises, sauces, soups and broths. It is made with water, rice, wheat and salt and contains 16% alcohol.

You only need approximately one or two tablespoons to bring greater character to a dish. A little of this amber gold goes a long way, so add sparingly—your wok needs a flavour boost, not a swimming lesson.

What Does Chinese Cooking Wine Do?

Double Phoenix Red Label helps connect and enhance the other ingredients in a recipe. It complements soy sauce, oyster sauce, ginger, garlic, sesame oil and fermented seasonings while adding an aromatic character that stock or water cannot create alone.

How to Use Double Phoenix Red Label Cooking Wine

In Marinades

For approximately 500 grams of sliced meat, combine:

  • 1 tablespoon Double Phoenix Chinese Cooking Wine
  • 1 tablespoon light soy sauce
  • 1 teaspoon sesame oil
  • 1–2 teaspoons cornflour
  • Fresh ginger, garlic or white pepper

Marinate for 15 to 30 minutes before cooking. This combination adds flavour while helping the meat develop a tender, glossy finish.

In Stir-Fries

Pour a measured tablespoon around the hot inner edge of the wok after browning your protein. The heat releases the wine’s aroma before it combines with the remaining sauce.

Measure it before you begin. Searching for the tablespoon while the garlic is rapidly becoming charcoal is not the calm culinary experience we are aiming for.

In Braises and Stews

Add one or two tablespoons to soy-braised pork, beef, chicken, tofu or mushrooms. Pair it with ginger, garlic, star anise, soy sauce, stock and a little sugar for a beautifully rounded sauce.
