Excellent product, but the postage is worth more than the flower itself! GRUH!!
Up until now I have been using wallaby‘s bread flour at 11.5% protein and all my sourdough‘s have been turning out a sticky gooey mess. I made up a kilo batch of flour 500 g of Caputo and 480 g of the Willoughby flour and 12 g of gluten flour and for the first time I had good oven spring the crumb was the best I’ve had yet because of the gluten strength. I could leave it ferment a little bit longer to get a lighter crumb.

The day my boax arrived I took it to my dear friends house for the opening! We were amazed at the smooth taste of the oil and immediately started finding ways to get it into out mouths!!
Bread with dukkah and oil, salad with only lime squeezed with the oil! Drizzling it over the quiche! I have nearly finished my first can and have 6 women on board for a big buy!!!!
