Good laksa is a labour of love: a dozen aromatics, a mortar and pestle, and a kitchen that smells fantastic for days. Valcom has done the heavy lifting, so all you have to do is add coconut milk and slurp.

This Thai-style laksa paste brings together shallot, lemongrass, galangal, garlic, chilli and turmeric with a savoury depth from shrimp paste. It gives you that golden, fragrant, gently fiery base that makes laksa so addictive. It's rated medium hot, with enough warmth to wake up a weeknight but not enough to scare the table.

Stir it through coconut milk and stock for a classic laksa with chicken, prawns or seafood. You can also use it as a marinade for barbecued prawns, a quick curry base, or a spoonful to lift fried rice and noodles.

Quick laksa for 4

Fry one 230 g jar of paste in 1 tbsp oil for 2 minutes, until fragrant.

Add 400 ml coconut milk and 500 ml low-salt chicken or vegetable stock, then simmer for 5 minutes.

Add 500 g sliced chicken thigh or peeled prawns and cook through.

Pour over cooked rice vermicelli.

Top with bean sprouts, coriander, fried shallots and a squeeze of lime.

Tip: The paste is well seasoned, so taste before adding any salt or fish sauce.
